Here is the RED VELVET MUG CAKE RECIPE:
Ingredients
- *This is a microwave mug cake and takes no longer than about 1 min to bake in the microwave. (It may take longer, maybe 1 1/2 min if you double the recipe for one extra large mug).
- WET INGREDIENTS
- 2 Tbsp flavorless oil (I prefer canola or vegetable oil)
- 1 Tbsp full fat sour cream or buttermilk
- 1 egg (at room temperature - if your egg is cold, a good hack is to set it in a bowl of warm water for about 5-10 min beforehand)
- 1 tsp pure vanilla extract (or flavoring of choice)
- 1/4 tsp red food gel color
- DRY INGREDIENTS:
- 3 Tbsp All purpose flour
- 1 1/2 Tbsp natural unsweetened cocoa powder (I use Hershey's, but you can use Valrhona or Ghirardelli. CAUTION: DO NOT USE NESQUICK or HOT COCOA MIX - it is not the same)
- 2 Tbsp granulated sugar (can increase to 2 1/2 Tbsp if you are not using frosting and you want it to taste a little sweeter)
- 1/4 tsp baking powder
- EQUIPMENT: Mug, spoon, measuring spoons, and OPTIONAL: sieve or sifter
Instructions
- Use a microwave-safe regular sized mug. (Caution: some have little bits of metallic paint on them and these are not microwave-safe). Add in the oil, sour cream, egg, vanilla, and red food gel color and mix them together (using a spoon will protect your mug from scratches).
- Place a sieve or sifter over the mug and add in the flour - sift into the mug. Then the natural cocoa powder, (NOT the same as hot cocoa mix) - sift into the mug. Add in the sugar and baking powder and stir until fully combined.
- Please remember NOT TO OVERMIX - this can lead to too much gluten forming and a tough cake.
- Place the microwave-safe mug filled with batter into the microwave. Cook for 45 secs to 1 minute. BAKING TIMES IN YOUR MICROWAVE WILL VARY DEPENDING ON YOUR WATTS. (My microwave is 1100W and cooked my mug cake in 55 secs.)
- TIP: Cook until there is only a slight bit of wetness on the very top of the cake - this means you baked it just right. The wetness will disappear as the mug cools down.
- OPTION: Mug cakes are most tender when eaten immediately - of course if you frost it right away, it will be hot and melt the frosting, but it doesn't matter if you're consuming it right away. If you want a nice designed frosting on top, however, you must let the mug cake cool at least 10-15 min, then add the frosting and decorations.
