HAPPY NEW YEAR EVERYONE!

To start the New Year off right, I wanted to make something that was SUPER SIMPLE and would take something from 2020 and make it into something NEW. That’s when I thought of TRUFFLES! First, they are delicious little morsels of a hard shell of chocolate encompassing something delightful like cake, nougat, or a smooth filling. I was looking at some cookies we had in our pantry – Oreos and a whole new box of uneaten gingerbread cookie people. And so, MY 3 INGREDIENT COOKIE TRUFFLES WERE BORN!

Also TO CELEBRATE THE NEW YEAR, I added some BLING with EDIBLE DISCO DUST.

How to get started: ALL YOU NEED IS A BOX OF COOKIES, A BLOCK OF CREAM CHEESE, AND MELTING CHOCOLATE (e.g. candy melts or my fave, CANDIQUIK).

Grind up the cookies in a food processor, add the softened cream cheese, and blend them all together in the same food processor until it forms a ball-like mound. Place the truffle mixture into a bowl and scoop 1 Tablespoon portions onto a parchment lined baking tray. I did 2 DIFFERENT VERSIONS OF TRUFFLES: OREO AND GINGERBREAD – THEN FORMED THEM INTO BALLS WITH A TUFT ON TOP SO THEY’D LOOK LIKE HERSHEY’S KISSES!

Make a few dozen to share and then PLACE THEM IN MINI CUPCAKE WRAPPERS – don’t they look CUTE AND TEMPTING?

I couldn’t resist taking a bite – YUMMY! PLUS, YOU CAN’T REALLY TELL THAT THEY’RE NOT CAKE TRUFFLES! Please take my word for it – the small amount of effort is completely worth it.
